A Powered by Plants Thanksgiving
Friendsgiving is quickly becoming a tradition in our house. Staying close to home and skipping out on the hectic travel weekend is too good to pass up. This year we got our friends together and ran a local "turkey trot" 5k and then I cooked a delicious plant-based meal. We had three "meat-eaters" at our table this year and I was very humbled by the positive feedback that they gave me. They truly loved the meal and I think minds were changed about what a vegan Thanksgiving entails. We had a Tofurky (a little funny looking but delicious), stuffing, mashed potatoes, mushroom gravy, Brussels sprouts, curried cauliflower couscous, and apple crisp with vanilla almond milk ice cream. Thanksgiving has always been my favorite holiday but it is even sweeter now that it is plant-based and cruelty free.
